5 sweet treats to make right now.

A few sweet treats inspiring me in the kitchen this week…

1. Red Velvet Hot Chocolate

There isn’t much in life better than a thick slice of red velvet cake, piled high with cream cheese frosting. Needless to say, the as soon as I spied these hot chocolates on A Beautiful Mess, they went straight on my ‘to make’ list. Quite an indulgence, but I imagine the taste is worth the calories a million times over! Check out the recipe here.

2. Red Velvet Pancakes

Red velvet pancakes. With buttermilk syrup. Ohmygosh. I don’t think there would be any words in the english language to even begin to describe the goodness of these!

3. Salted Caramel Chocolate Mousse

This recipe from Eat Live Run (a guest post from Cozy Kitchen) had me at hello.

I just love salted caramel – for me it is a very close runner up to the flavour of red velvet. And what better way to eat it than in chocolate mousse form? Yum, yum, yum.

4. Caramelised Pear and Cardamom Cake

A blast form the past – I baked this cake last year for a friend’s birthday (original recipe from Eat Live Run), and boy, it was good.

I like that its a bit different, beyond the typical chocolate, banana or carrot cake. Warm from the oven it is perfectly moist, yet crumbly. I think it would travel well too – if it lasted that long!

5. Strawberry Cucumber Smoothie

A light and healthy treat for a hot summer’s day. I found this recipe on Joy the Baker last week, and have since been intrigued by the use of cucumber in a smoothie – and very tempted to try it!

Things I Love Thursday.

Today I am taking a cue from one of the greatest bloggers out there, Gala Darling (a New Zealander too!). Here is what I am loving this week.

- Nature -

A couple of days ago I returned to Auckland from a two week holiday at home, in the Nelson countryside. Being away from the city and surrounded by fresh spring greenery was perfectly glorious.

My favourite city in New Zealand, without a doubt. I may be slightly bias, seeing as I grew up there, however it is always so wonderful to be home.

- Reading -

When I was younger I would read all the time – I have great memories of reading by torch light under the duvet, well after I was meant to be fast asleep. Somewhere over the last few years, that passion disappeared. I am rekindling this love with The Hobbit and The Power of One!

I recently purchased this awesome world map (from The Warehouse!). It sits above the bookcase, and I keep looking up at it wondering where I might next go in the world….

My mum bought Rian and I this print (from Red Gallery in Nelson), which I love! It reminds me of all the songs we used to sing at primary school. Do you remember singing this one?

Now I’m looking for a large white frame to mount it in!

- Running (again) -

I ran out of energy and inspiration to run consistently over the last few months, but I am back on the running boat and trying to get out there every second day. It is definitely one of my greatest passions. Especially running in rural areas!

- Spring -

Spring is in the air. There’s still a chill about, but the sun seems to be shining brighter (However I will be eating my words if those forecasted storms turn up this weekend!). I have a new pair of sandals and a couple of new Spring-inspired nail polishes – what more could I want in life?!

This is the best season. Wee lamb-ies and ducklings, yummy fruit and veges starting to come into season, and best of all, knowing that Summer is just around the corner.

Stop worrying about what other people think.

I think we’ve clearly established from my last post, that I worry – way too much, about way too many things.

While we’re on the topic, why don’t I throw in something else that worries me, perhaps even more so than the little things:

I worry about what other people think of me.

Are they thinking, I can’t believe she asked a stupid question like that – she’ll never be successful!

Are they thinking, she shouldn’t be wearing a dress like that?!

Are they thinking, her makeup looks terrible today – she’s obviously a terrible makeup artist!

Are they thinking, Christie is useless at writing, what’s she playing at by starting a blog?!

Perhaps some people do think such thoughts, perhaps they don’t. Either way, it’s an entirely natural (and unfortunately very common) trait to relatively compare and judge ourselves against others.

But, should I care about others’ opinions? It’s a waste of my time, and it forces my energy to be channelled into trying to impress others and meet their expectations – when I could instead be using that energy to grow into a more successful person, based on my own expectations of myself.

I’ve been exploring some strategies into how I can avoid the “worrying what other people think” trap.

  • Often, it’s just my mind creating thoughts about what others might be thinking. It’s my own self-doubt that drives this, so I need to believe in myself and my ability to be successful.
  • Know what I want to achieve and not let others’ opinions sway this. I have been using my lost list (and unpublished bucket list) as a guide for this. I have my lists, and I will tick the items off in my own time.
  • Remember that others opinions are exactly that – opinions. We are all entitled to our own opinions. Although others’ may differ, it doesn’t automatically validate their thoughts over mine.
  • If my idea/look/skill is rejected, that’s okay. There is rarely a clear path to success. Some of the most successful people have zigzagged their way to where they are. What doesn’t kill us makes us stronger, right?
  • Even the most successful people have haters. Justin Bieber, Lady Gaga, Donald Trump. They’ve all got people who dislike them, yet has this caused them to shy away from success? Nope.

I’m the first to admit, this is a hard process for me. I hate conflict of opinions, and when others doubt my ability to do something, this affects me immensely.

So I’m starting with superstar Lady Gaga for some inspiration. I was reading this weekend’s Canvas magazine (from The Weekend Herald), and one of Gaga’s quotes keeps running over and over in my mind. The following was in response to the interviewer’s question about what her ‘stamp’ will be on the universe…

She was always herself. She was fearless, and she moved pop culture, technology, art and music forward relentlessly, and she never gave a f*** what anybody though about her.

Today is the day I stop giving my mind permission to be influenced by others. Today is the day I stop worrying about what other people think.

Here’s to becoming fearless!
