A few sweet treats inspiring me in the kitchen this week…
1. Red Velvet Hot Chocolate
Image sourceThere isn’t much in life better than a thick slice of red velvet cake, piled high with cream cheese frosting. Needless to say, the as soon as I spied these hot chocolates on A Beautiful Mess, they went straight on my ‘to make’ list. Quite an indulgence, but I imagine the taste is worth the calories a million times over! Check out the recipe here.

2. Red Velvet Pancakes
Image sourceRed velvet pancakes. With buttermilk syrup. Ohmygosh. I don’t think there would be any words in the english language to even begin to describe the goodness of these!

3. Salted Caramel Chocolate Mousse

I just love salted caramel – for me it is a very close runner up to the flavour of red velvet. And what better way to eat it than in chocolate mousse form? Yum, yum, yum.
4. Caramelised Pear and Cardamom Cake
A blast form the past – I baked this cake last year for a friend’s birthday (original recipe from Eat Live Run), and boy, it was good.
I like that its a bit different, beyond the typical chocolate, banana or carrot cake. Warm from the oven it is perfectly moist, yet crumbly. I think it would travel well too – if it lasted that long!
5. Strawberry Cucumber Smoothie

A light and healthy treat for a hot summer’s day. I found this recipe on Joy the Baker last week, and have since been intrigued by the use of cucumber in a smoothie – and very tempted to try it!
